Lemony Chicken & White Bean Skillet
A bright, one-pan dinner with tender chicken, creamy beans, and greens. It tastes like more work than it is.
Make thisRoasty, colorful, and easy to set out family-style. The lime yogurt makes every bite feel finished.
How to make it
Heat the oven to 425°F. Toss the sweet potatoes with olive oil, paprika, cumin, and salt on a rimmed sheet pan.
Roast for 20 minutes. Add the black beans, stir, and roast until the potatoes are browned at the edges, about 10 minutes more.
Meanwhile, stir the yogurt with the lime zest, half the lime juice, and a pinch of salt.
Warm the tortillas in a dry skillet or wrap them in foil and place them in the oven for the final 5 minutes.
Fill each tortilla with the sweet potato mixture, cabbage, avocado, and lime yogurt. Squeeze over the remaining lime juice.
Put each topping in its own bowl and let everyone build their own. For a dairy-free table, replace the yogurt with mashed avocado loosened with lime juice.
