Smoky Sweet Potato & Black Bean Tacos

How to make it
Pat the chicken dry and season both sides with salt. Heat the olive oil in a large skillet over medium-high heat.
Sear the chicken until deeply golden, about 5 minutes per side. Transfer it to a plate; it will finish cooking later.
Lower the heat to medium. Add the onion and cook until softened, 4 to 5 minutes. Stir in the garlic for 30 seconds.
Add the beans and broth, scraping up the browned bits. Nestle the chicken back into the skillet and simmer, partly covered, for 8 minutes.
Add the kale in handfuls and cook until tender and the chicken reaches 165°F, 3 to 5 minutes.
Finish with the lemon zest, lemon juice, and Parmesan. Taste and add a pinch more salt if needed.
Swap baby spinach for kale and add it only during the final minute. Crusty bread is welcome, but the beans make this complete on its own.
